An organic and 100% French single malt

 

The first Black Mountain single malt, this whisky was produced in partnership with an Occitan brewer and an Occitan distiller. And since one first is not enough, it is also our first 100% French creation and our first creation made from organic spring barley!

A creation both French
and traditional.

With the help of the brewer, we selected an organic barley that matched our values and a distilling yeast that would let us develop the widest possible aromatic palette.

The double distillation in a Charentais alembic allowed us to obtain a distillate with fruity, pastry, and grainy notes. As for the barrels, we chose to make half of them new French oak barrels, and for the rest, we stuck to our safe bet—barrels used for prestigious Gascon spirits!

The Nose

The nose opens on cereals, with aromas reminiscent of a malthouse. Then fruits arrive—apple and pear—accompanied by the liveliness of lemon and spices from new barrels.

The Palate

On the palate, the cereals are discreet and allow the wood to express itself. They add toasted and spicy aromas. The fruit refuses to be outdone, with a delicious note of fruit in syrup that adds luxuriousness.

The Finish

Toasted bread and cereals show up on the finish. Aromas of puffed wheat give it a touch of originality, and the light tannic and burnt wood notes give it good persistence in the mouth.
