BM N°1 – Excellence

A strong character with rich aromas

BM N°1 offers whisky lovers a rich, complex and multifaceted tasting experience.
In order to elaborate this whisky, the best casks containing the finest whiskies from Scotland were selected in our cellar. Older whiskies, also from Scotland but with a higher proportion of malt, were added. These whiskies were delicately blended and then poured into casks–which had been used for the ageing of the most prestigious spirit in Gascony–for the duration of this second maturation lasting six more months at least. Before bottling our whisky, the level of alcohol was adjusted with pure water from the Montagne Noire to reach 42%, the ideal percentage for the expression of its qualities.

The nose is intense and complex with floral, honey, vanilla oak and grain notes as well as slightly spicy fragrances.
On the palate, it is harmony caressing the tongue with flavours of citrus fruit and then grain; there is a rich bouquet of aromas spiced with hints of pepper and nutmeg.
The finish is refined and long lasting, with a gentle smoky note.
It is to be tasted neat, like the finest spirits.

BM N°2 – Premium

Floral fragrances and sweetness

With BM N°2, we created a blended whisky with a pleasing balance, combined with a delicate harmony and a great complexity on the palate. It was brought from Scotland to the south west of France with its natural alcohol content (that is to say with the volume of alcohol that it had when it was taken out of the cask, which is about 62%). The alcohol content was then reduced to 40% by adding water from our spring in the Montagne Noire. It was eventually matured during several months in casks which had been used for the ageing of the most prestigious spirit in Gascony.

The nose offers an amazing intensity with floral fragrances, hints of oak and vanilla. On the palate, floral aromas are developed into fruity notes and a hint of honey, as well as spicy flavours of cinnamon and gingerbread. The finish is long lasting, delicately smoky, with a touch of liquorice. It is enjoyed neat and becomes even more remarkable on the rocks.

BM Smoky aroma

Full-bodied and smoky taste

To elaborate our BM Smoky aroma, our main blend from Scotland was used, whose certificate indicates an ageing of three years, but which is actually made of some whiskies matured for five or six years. The blend was then matured in our cellar in the heart of Occitanie for a period of 12 to 16 months in casks which had contained the most prestigious of all the spirits in Gascony. Afterwards, two smoky Scottish whiskies were added to reach 20% of the blend, a proportion which allowed us to get the desired balance between aromas. Once the blending process was over, our whisky rested in refill casks as long as necessary to give birth to the most harmonious alliance of these different whiskies.

The nose is mineral with initial hints of herbs, barley and smoky aromas. Then come floral fragrances and notes of dried fruit and oak.
The palate is first floral and fruity with smoky flavours developing into aromas of toast and malt. Then notes of vanilla, citrus fruit, leather and subtle touches of herbs can be tasted.
The finish is rich, savoury, with a hint of mocha cake.

Our Secrets

The distinctive and exceptional aromas of Black Mountain whiskies belonging to our collection called Sélection result from a study of two years, including research, tests and readjustments by the team of Black Mountain Compagnie, who were helped by specialists with the highest level of expertise in whisky maturation. The qualities of Black Mountain whiskies derive from the harmony we found between the three main components of our products: water, casks, whiskies.

Water from the
Montagne Noire

The Montagne Noire is a region in the south-west of France corresponding to the south-west border of the French montainous area called Massif Central. Most rocks which compose it date back to the Precambrian and Primitive eras; they are more than 300 million years old. The hydrology of the Montagne Noire is very special. It benefits from heavy rains and thus forms an authentic water tower. It is gifted with many springs whose water possesses the best qualities for the production of whisky, such as a low level in calcium and magnesium, as well as no iron.
It is also the abundance of this water from the Montage Noire which, among others, allowed the construction of the Canal du Midi, an exceptional ribbon of water running from one end of our Occitanie region to the other!

Choosing
the best casks

All the whiskies which are selected, blended and enriched with clear water from the Montagne Noire are aged and matured for an additional period of time in our casks which have already contained the most prestigious wines and spirits in our region.
This final step brings in its turn a unique identity to our whiskies, the renowned flavours from the Occitanie region.

Selecting
the finest whiskies

Once water and casks have been chosen, the team has to find the whiskies which will reach the desired qualities to please both olfactory and gustatory senses and which will satisfy the requirements of our collection, Black Mountain Sélection. It is in Scotland exclusively that are found all the different whiskies composing our collection called Sélection.
They are whiskies with their own identities, but likely to get a more refined taste as they develop into perfection in our casks which were selected for the purpose of maturation. We take all the time we need to look for, sample and compare whiskies before making the decision to select one of them. And the result is worth it.
